Who doesn’t love a new bar with an eclectic history and sense of intrigue?

Whether you’re a whisky lover or just love checking out the newest bar offering, The Doss House in The Rocks is the place to be.

Tucked into the sandstone depths of one of the city’s oldest suburbs, The Doss House recaptures the convivial spirit of Sydney’s formative years.

If the walls could talk, the stories would be endless. The property has an illustrious past with former tenants including a bootmaker, boarding house and opium dealer – and The Doss House has carefully entwined this history into the interiors of each of the five cosy bar spaces, resulting in a venue steeped in character and ambiance.

The whiskies take centre stage at this unique basement bar, with a collection of 150 varieties prepped for the launch. Australia, Scotland, Ireland, Japan and America are all represented with premium bottles encased in bespoke oak cabinets throughout the venue.

This is the place where you can taste ultra-rare whiskies such as Hibiki 30-year old, Glenglassaugh 30-year old, GlenDronach 1994 and the Nikka ‘Taketsuru’ Fortune 80.

If you’re not after a whisky on the rocks, the creative cocktail menu will leave you starry-eyed. Signature cocktails such as The Dusy Scotchman (Laphroaig 10yo, Branca Menta, honey, saline), Blackberry and Lemon Myrtille Fizz (blackberry-infused Stolichnaya, lemon myrtille, fresh lemon, basil) sit alongside a selection of classic cocktail favourites.

“What makes our experience a little special is the fact you have this rare opportunity to choose a whisky from one of Australia’s finest producers or one of the best from aboard and enjoy it in a space that has this rich history attached to the walls unlike anywhere else. The building is steeped in stories you’d expect to hear from your Granny; old and romantic,” says co-owner Colm O’Neill.

The Doss House will be introducing a collection of whisky flights in the coming months, as well as a Guinness and Oyster matching experience.
